Originally seeking farmland to cultivate avocados, pecans, and table grapes, until the brothers encountered Bodegas Don Luis, with the oldest Quebranta vines in Ica Valley and exceptional character. The vineyards are in the El Carmen hamlet in the San Juan Bautista district of the Ica Valley in southern central Peru. A historical region renowned for the quality of its wines and piscos, with ideal day to night temperature shifts and clay soils.

Crafted using a traditional copper still, the pisco is rested for a minimum of 8 months in stainless steel tanks. Pisco puro at Cuatro Gallos involves fine distillation of a single varietal to create a tasting experience with very little aromatic structure in the nose, which allows the drinker not to saturate their taste sensations, and reveal its complexity of flavors in the mouth. 

Their Mosto Verde method is produced from grapes that are not fully fermented, the Green grape Must still contains a small amount of residual sugar when distilled. This results in a sweeter and more aromatic Pisco, and is distilled at a low temperature to avoid the formation of compounds that could alter the pisco flavor.

Pisco Quebranta

Clear, aromatic, and balanced Peruvian pisco featuring notes of grape, white pepper, and raisin cake. It offers a smooth, sweet, and moderately complex palate with tones of nuts, citrus, subtle green olive, and a clean finish.
