Produced by Vinicola del Altiplano in San Luis Potosí in the high plateau of central Mexico, La Penca is distinctive to its region with herbal notes reminiscent of its environment in the Altiplano Potosino countryside. With a vegetal profile from 100% Salmiana wild agave, it features a herbaceous, earthy flavor (distinct from the smoke-forward Espadín mezcals common in Oaxaca) with hints of black pepper and green olive. Aged in white oak bourbon barrels, La Penca is known for containing two agave gusanos or Chinicuiles in each artisan handblown bottle.
Agave Salmiana is also significant to the craft of Pulque, a fermented beverage ancestral to the Altiplano Potosino since the Mesoamerican period. Harvesters tlachiqueros cut into the heart of the plant to harvest the thick milky aguamiel, which is fermented into pulque.
