With over twenty five years of experience in the agave distillate industry as an importer and brand owner, Juan Pablo of Tequila Specialists launched Puntagave to express the distilled flavors of Mexico. Puntagave Rustico represents diverse agave terroirs through controlled denominations from different altitudes and micro-climates throughout Mexico. As with wine, these agave distillates are expressions of weather, terroir, and regional technique, a showcase of the spectrum of agave flavor and history.

Weber Blue agave, Agave tequilana

Distinct from the tequila valley, the second major growing region in Jalisco of highland Los Altos rises 3,700 meters above sea level. Altos rich red soil is very porous and rain water filters right through, leaving these agaves with extreme stress for survival. Highland agave yields the highest grades of sugar content, producing a sweeter, more citrus, and fruitier-tasting profile. 

Espadín, Agave augustifolia

Puntagave Rustico Mezcal uses a more ancient form of distillation that has retained deep ties to indigenous cultures across the country. While in tequila production the agave head is baked in autoclaves or an above-ground oven, Mezcal follows the tradition of underground pits. A fire burns for 24 hours to heat the volcanic stones that line the pit. The piñas are roasted covered with moist fiber that is left over from the fermentation process. A layer of agave leaves or woven palm leaves cover the fibers and piñas are cooked for 2-3 days.

Sotol or Desert Spoon, Dasylirion wheeleri

Sotol Distilleries are called Vinatas. One of Mexico’s best kept secrets, sotol is an extraordinarily pure spirit with its own denomination of origin, highly valued for its rich flavors. A wild-harvested species in the harsh climate of the Chihuahuan Desert, only the strongest and healthiest plants survive this natural selection. Maturing on the mountainsides for 15 years, the plant stores vast amounts of energy before it is ready to be harvested. Each bottle contains the distilled nectar of an around 15-year-old plant, providing the richest agave scent and flavor one can find in a Sotol.

Piñas of the sotol are placed in a volcanic rock-lined pit where they roast for 3-4 days. They are then hand-crushed and open-air fermented for 4-8 days. Distillation occurs in a pot-still fueled by fire for the first distillation and gas for the second. It is distilled to 60-80% ABV and brought down to proof. It rests for 60 days before bottling unfiltered.

coastal Agave Pacifica

Bacanora, a spirit deeply rooted in the cultural and historical fabric of the State of Sonora, endured a tumultuous journey marked by eight decades of prohibition and clandestine production. PUNTAGAVE became the first legal 90-Proof premium Bacanora imported into the U.S. Centuries before tequila, Opatas Indians produced small batches of Bacanora in the canyons of the Sierra Madre mountains in Sonora. Wild Silvestre agave hearts, harvested from the rich, red soil of the region, are packed out by burro. The agaves are then combined with pure spring-fed water, fire, wild yeasts, and distilled in copper stills. Master Distiller Roberto Contreras, whose grandfather made artisanal Bacanora during the time of the Mexican revolution, carries on the tradition today.

Lechuguilla, Agave Maximiliana

Raicilla distilleries are called Tabernas. Raicilla and Bacanora are considered the most fragant and fruity. Produced for over 400 years in the coast and mountains of Jalisco, Raicilla is distinguished by the region’s plethora of agave species. Puntagave Raicilla profile hails from a taberna in the mountains of Jalisco. This version highlights the floral characteristics of the Maximiliana agave, commonly known as Lechuguilla. From the root, or “piña,” of the Lechuguilla, emerges a bouquet of light citrus and floral aromas, complemented by notes of hibiscus, beach plum, and pineapple. This mountain-produced Sierra Raicilla offers a delicate and intricate flavor profile that shows the diverse potential of the agave plant.

Rustico Tequila

Highland agave from the red soils of Los Altos and made in the town of Jesus Maria, Jalisco produces a sweeter, more citrus, and fruit aroma tequila.

Mezcal Espadín

Moderate oak & sweet agave with complex aromas of fresh green vegetables and touches of pepper. Long viscous finish with lasting oak and notes of cedar.

Sotol

Raicilla

Bacanora

Aromas include cedar, desert florals, overripe fruit, and lactic funk. Complex palate features sweet cooked agave, peppery spice, minerality, grassy undertone. Long, sweetening warm finish like candied green apple.
