Zhumir Distillery produces high-altitude spirits in the Paute Valley of Azuay, Ecuador. The brand name references the traditional hollow cane used to sample liquid from barrels, reflecting a production mission centered on highland sugarcane cultivation.
Operating at over 2,000 meters above sea level, the distillery utilizes local Andean water and molasses from high-altitude plantations. The liquid undergoes fermentation with specific yeast strains before distillation in copper pot stills and maturation in American white oak. Visitors can access the Hacienda Zhumir for guided tours and specialized tastings that detail the historical distillation processes.
Zhumir Canuto is the result of a refined technique in spirits distillation perfecting this aromatic distillate for over half a century. Its origin lies in the highlands of southern Ecuador, where it is distilled from “Guarapo” sugar cane, cultivated at over 1200 meters above sea level. The advantages of being at the middle of the world are evident, such as the natural sweetness of this cane variety, an intense flavor and aroma, very pleasing to the senses.
After aging in white oak barrels, 2 pieces of cane, also called “canutos,” are introduced as a symbol of the spirit of the cane, lightly flavored with “Guarapo” to add a delicate sweetness at the end.
